PETIT VOUR COOKS: MUSHROOM QUINOA FEATURING MOON JUICE

Mushrooms have long been touted for their incredible healing powers. Recent research exalts the cancer-fighting properties of certain types of mushrooms, as well as their immune-boosting and brain-nourishing qualities. 

Today, we're cooking with Moon Juice's Reishi Mushroom Powder, a high-quality adaptogenic supplement to help boost mental ability, and strengthen your immune system. 


 


VARA'S HEALING MUSHROOM QUINOA

serves one


Ingredients:

1/4 cup dry quinoa
1/2 cup of water
4 white mushrooms or baby bellas,
washed, de-stemmed and chopped
1 large clove of garlic, diced
1 tbsp extra-virgin olive oil
1 stem fresh rosemary
2 sprigs fresh thyme
salt to taste
pepper to taste
For additional wellness:
1/2 tsp Moon Juice Reishi powder


Directions:

Combine quinoa and water in a small pot, and bring to boil.
Upon boil, reduce heat and simmer on low, covered.
Let simmer for 15 minutes.

While quinoa is simmering, prep mushrooms and garlic. Place olive oil into a small sauté pan. Add diced garlic and chopped mushrooms to the oil. Sprinkle with salt and pepper, stir, and start to warm on medium heat, covered. Strip rosemary and thyme from stems. When mushrooms start to sizzle a little, add thyme and rosemary to the pan, and stir. Allow to cook a minute longer. Mushrooms will be done when they are tender and slightly browned (about 4-5 minutes).

When quinoa is ready, remove pot from heat, and fluff with a fork. 
Fold in herbed mushrooms, and Reishi powder. Stir and serve immediately.
